3-5 amp is current for fan, for relay coil it will be probably 50mA which is 100% fine. You need to use relay with 5V coil.

Nie ma dedykowanego odczytu pod %etanolu ale nie widzę problemu aby podłączyć wyjście tego czujnika jako inne niewykorzystane wskazanie, np. EGT i wyskalować tak żeby 0EGT = 0% i 100 EGT = 0%.
