Yes you can connect it to any AdcX input and use other value scaling which you are not using, e.g. connect is as EGT, AFR, Boost or anything else and scale it to your needs and then you can log it in datalogger.

You need to count pulses per single revolution of main shaft, usually it will be 0.5, 1x, 2x or 4x. If you enter wrong multiplier in settings you will have wrong RPM (but lineary rescaled), e.g. instead of 3000 RPM you will get 750/1500/6000/12000 RPM depends on settings. Usually crank sensor is working fine. How wrong these values are? Maybe it's divided by 2, 4 or 8 and it needs just calibration? Or is it totally random?

PS. please make sure also that you have selected RPM signal for A11 input and set RPM settings properly in advanced -> RPM

EEPROM 24xx can not be read protected. They can be only write protected with pin7 (WP) but it should still read. Please check if you do not have invisible layer of flux or paint because it may work as insulator and you will have similar communication error. You can use 99% IPA to clean up eeprom pin...
