UTCOMP has built in 2x goldcaps 1F inside (super capacitors) so short power failures (up to 3 seconds) should not be the case. You can test if these caps are working properly by setting trip summary screen e.g. to 10 seconds, disconnect power supply and measure how long screen is displayed until UTC...

Refresh rate depends on your sensor resolution. It's physically imposible to get high refresh rate when resolution is to low. For <30imp/revolution it will be 1Hz, because there are to small number of samples to get faster readings. For >30imp/rev it will be automatically switched to 5Hz and +/- 10r...

I see standard voltage/pressure table above. Just connect signal of this sensor to AdcX input and it will work.

DS inputs are only for 1-wire communication dedicated for DS18B20 sensors - each sensor on separate wire.

Digital temperature inputs are only for DS18B20 sensors. All NTC temperature sensors and pressure sensors should be connected to analog inputs.
