Based on datasheet, it's working like OTP, so when you protect it, you can not change it anymore:
Once programmed to AAh or 55h this address becomes read only. All other codes can be stored, but neither write protect
the address nor activate any function

It's for DS2431, only comment is wrong. Would you like to save it to single file? Usually EEPROM is separate file and control registers is other file (it needs 2 operations for read) but if you need it in single operation it's no problem, I prepared you script for reading all area. Interesting. Please observe it carefully, you may have voltage drop on 1m flat cable. There is no resistors in series, but there is DC/DC converter on OLED board for VDD (+5V -> +3.3V)

Because content is only on addr range 0x0 - 0x7F.

If you would like to set protection bytes you will need to do it with script. You can make own script and use it with automatic mode viewtopic.php?f=32&t=913

How long cable have you tried? Have you tried flat cable? (only flat cable max 2.7m should work)

Here you have connector pinout for OLED: 2024-02-21 110710.png VDD = +5V I checked datasheet of NHD-3.12-25664UCW2 and it does not tolerate +5V power supply (max 3.5V) - seems it does not have DC/DC converter on board. Interface is the same, but unfortunately it will not work, it will be damaged aft...
